I absolutely love this soup! In our house, Mexican food is the top choice for any meal, and a good soup in the fall and winter calls for this one. It’s good with cheese and tortilla chips, or on its own as a chicken and veggie soup. I like to add a bit of Rotel tomatoes for the kick, but you can substitute that with normal diced tomatoes. It’s very flexible, but my favorite part is that it comes together in about 10 minutes and simmers in the slow-cooker all day. My slow-cooker keeps me sane, people.
